Mexico's best-known sparkling-wine house, 10 minutes from Cadereyta, with a cellar 25 meters underground.
Finca Sala Vivé, the Mexican estate of the Catalan sparkling-wine group Freixenet, sits among vineyards on the highway between Ezequiel Montes and Cadereyta. It is the best-known winery on Querétaro's Cheese and Wine Route and, for many visitors, the reason to come to this part of the state at all.
The project began in 1979, when the Ferrer family, owners of Freixenet, chose the high, dry plains around Ezequiel Montes to make wine in Mexico. The estate is named after Dolores Sala Vivé, the family matriarch. Its specialty is sparkling wine made by the traditional method, with the second fermentation in the bottle, aged in cellars dug about 25 meters below ground. In 2016 its Viña Dolores Brut Reserva won a Grand Gold medal at the Concours Mondial de Bruxelles, a first for a Mexican sparkling wine.
The classic visit takes you down into the cellars with a guide and ends with a tasting. On weekends and during the harvest season it gets busy, especially with day-trippers from Querétaro and Mexico City.

Getting there
The winery is at km 40.5 of the San Juan del Río–Cadereyta highway, about 10 minutes west of Cadereyta by car toward Ezequiel Montes. Wine-route tours from Tequisquiapan and Querétaro often stop here.
