An organic winery known for its underground cellar, reached down a ramp lined with carved monks.
Vinícola Rancho Toyan sits right next to Dos Búhos on the San Miguel–Querétaro highway, and it is one of the most whimsical wineries in central Mexico. Founded by Martha Molina, it is run on organic principles, with vegetable gardens and fruit orchards growing alongside the vines of Chardonnay, Cabernet Sauvignon and Merlot.
The star of the visit is the cellar. A ramp lined with carved monk figures leads down to a barrel room dug some twenty meters underground, where the wine ages in French oak at a steady, cool temperature. Sculptures and odd architectural details are scattered across the property, which makes simply walking around part of the fun, and many visitors say the cave alone is worth the trip.
Tours usually end with a tasting, and the winery hosts special breakfasts, lunches and markets with produce from its own gardens. It is an easy pairing with Dos Búhos for a half day of wine country close to Comonfort.

Getting there
Toyan is at about kilometer 8.5 of federal highway 111 from San Miguel de Allende to Querétaro, beside Dos Búhos. From Comonfort, head north toward San Miguel and then take the Querétaro highway, about 35 to 45 minutes in all. Book ahead, and use a driver or taxi if you will be tasting.
