About Dajiedhi
Dajiedhi comes from Otomi and, according to local oral tradition, means "eye of the sun" or "sunset". It lies in the north of Actopan municipality, in the Mezquital Valley, at about 2,049 metres, on flat ground of phaeozem and alluvial soil above the Actopan-Santiago de Anaya aquifer. It has 2,418 inhabitants (INEGI 2020), one primary school, one preschool and a telesecundaria, and its chapel is the architectural highlight.
The village lives from farming, livestock, poultry and trade, and is known across the region as a town of barbacoa makers: the craft is passed down through generations. The barbacoa is lamb cooked in an underground oven; the village's other dish is ximbo, hen meat wrapped in maguey leaves and also baked underground.
Since 2024 that fame has a fixed date. At the August patron fair, in honour of the Divino Salvador (the Transfiguration, 6 August), the community opens a huge pit and gives the barbacoa away free. For the second edition Mexico Desconocido counted two ovens three metres across, about a hundred sheep and some 10,000 people; Milenio announced the fair's 50th anniversary for 2026, 5 to 10 August, with the uncovering on Monday the 10th at 11:00. The village also marks Holy Week, Christmas, Day of the Dead and, on 12 December, the Virgen de Guadalupe.
